Broccoli Salad (version #2)
- 2 lbs. of beacon
- 5 nice bunches of fresh broccoli flowerets
- 2 lbs. of shredded mozzarella cheese
- 1 cup of mayonnaise
- 1/2 cup of sugar (I cut the sugar to 1/3 cup)
- 2 tbs. of vinegar
Fry the beacon and allow to drain on paper towels till
cool. Break the beacon into bite size pieces of about an
inch. Separate the broccoli flowerets. Into a large bowl
combine the mayo, sugar and vinegar and blend, add broccoli, then
beacon and cheese and toss gently. Delicious!
