Shredded Barbecued Beef
Ingredients:
- 4 lbs. of boneless beef chuck roast or other roast beef
- 3 tbsp. cooking oil divided
- 2 large onions chopped ( I like Vidalia's or sweet onions)
- 1 cup ketchup
- 1 cup beef broth
- 2/3 cup chili sauce
- 1/4 cup cider vinegar
- 1/4 cup packed brown sugar
- 3 tbsp. Worcestershire sauce
- 2 tbsp. prepared mustard
- 2 tbsp. molasses
- 2 tbsp. lemon juice
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/8 tsp. black pepper
In a Dutch oven or roasting pan brown roast on both sides in 1
tbsp. oil. Meanwhile in a large saucepan, sauté onions in
remaining oil until tender. Add remaining ingredients and
bring to a boil. Reduce and simmer for 15 min. stirring
occasionally.
Pour over roast, cover and bake at 325 degrees for about 2
hours or until the roast is tender. Remove the roast and
shred with a fork and return to the sauce. Serve on toasted
buns or rolls.
