Shredded Barbecued Beef

Ingredients:

  • 4 lbs. of boneless beef chuck roast or other roast beef
  • 3 tbsp. cooking oil divided
  • 2 large onions chopped ( I like Vidalia's or sweet onions)
  • 1 cup ketchup
  • 1 cup beef broth
  • 2/3 cup chili sauce
  • 1/4 cup cider vinegar
  • 1/4 cup packed brown sugar
  • 3 tbsp. Worcestershire sauce
  • 2 tbsp. prepared mustard
  • 2 tbsp. molasses
  • 2 tbsp. lemon juice
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/8 tsp. black pepper

In a Dutch oven or roasting pan brown roast on both sides in 1 tbsp. oil.  Meanwhile in a large saucepan, sauté onions in remaining oil until tender.  Add remaining ingredients and bring to a boil.  Reduce and simmer for 15 min. stirring occasionally.

Pour over roast, cover and bake at 325 degrees for about 2 hours or until the roast is tender.  Remove the roast and shred with a fork and return to the sauce.  Serve on toasted buns or rolls.
